NatEnzyme Bakery Biscuit is recommended for the production of wafer, crackers, wafer for cornets, breadsticks, etc. Its particular formulation allows to replace completely cysteine, deactivated yeast and glutathione. It is absolutely not recommended for the production of bread and oven leavened products in general, where stability and firmness during leavening are necessary.
